Sweet Potato Toast

 

Putting in a twist on toast: try out this sweet potato toast recipe that is a healthier alternative than bread! You can top these with your usual toast toppings, or try out some of the examples shown in the video! You can use almond butter and banana, or almond butter with blueberries. For savory options, try avocado with a soft boiled egg, or avocado with smoked salmon.

 

Sweet potatoes have great health benefits! They are a rich source of fibre and contains a variety of vitamins and minerals including iron, calcium, selenium. They are an excellent source of most B vitamins and vitamin C. One key nutritional benefit of the sweet potato is that they are high in an antioxidant known as beta-carotene. Beta-carotene converts to vitamin A once consumed. Beta-carotene responsible for the red, yellow, and orange coloration of some fruits and veggies.
